- 1 quart whole milk
- ½ pint heavy cream
- ¾ teaspoon sea salt
- 1/3 cup fresh lemon juice, approximately 2 medium lemons

- Pour the milk, cream, and salt into a saucepan.
- Over medium heat, bring mixture to a simmer, approximately 180 F. Turn off heat, pour in lemon juice, and stir gently. Allow to rest for 5 minutes.
- Line a colander or sieve with a few layers of cheesecloth and place it over a large bowl. Ladle the mixture into the colander and let drain for 30-45 minutes. The longer the ricotta drains, the crumblier it will be. If you find your ricotta is too dry, add in a little bit of the whey or add a touch of milk until you reach the consistency you desire. Season to taste with salt.
- Discard liquid and enjoy the fresh ricotta right away or transfer to an airtight container and refrigerate until ready to use. Keeps up to a week.

- ¼ cup sour cream
- 1 teaspoon sea salt

Directions
- Place potatoes in a small saucepan and cover with water. Bring to a gentle simmer and cook until tender. Drain and set aside to cool.
- In a saute pan, heat olive oil over medium heat. Saute leeks and thyme until tender. Add chard and saute until wilted, about 5 minutes.
- In a mixing bowl, combine eggs, sour cream, salt, and pepper until smooth.
- Layer chard mixture and potatoes evenly in the bottom of crust, pour over egg mixture and sprinkle with cheese.

Directions
- Bring 2 cups water to a boil then pour over the tea bags. Cover and let steep for 10 minutes.

- ½ teaspoon ground black pepper
- 2 medium carrots, peeled & cut into 1 inch pieces ¾ pound Yukon gold potatoes, cut into 1 inch pieces ¼ pound green beans, cut into 1 inch pieces
Directions
- In a 6-quart stockpot, heat oil over medium heat. Add brisket and brown on all sides. Remove from pan and set aside.
- Add onion and saute until tender, adding more oil as needed. Stir in tomato paste and garlic; cook for an additional minute.
- Add stock, stout, bay leaf, thyme, salt, and pepper. Return brisket to the pot and bring to a simmer, cover, and reduce heat to low; continue to cook for 1 ½hours.Add potatoes and carrots; cook for an additional hour.
- Add in green beans in the last 30 minutes of cooking. When brisket is fork tender, remove bay leaf. Adjust seasoning to taste and serve.

- 6-8 cups chicken or vegetable broth
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- 1/2 heavy cream
- 1 1/2 teaspoons of salt
- 1 teaspoon ground black pepper
- 1 baguette, sliced
- 12 ounces Gruyere, grated
Directions
- Melt butter in a 6 quart stock pot over medium heat. Add onions, and honey, and cook, stirring frequently until caramelized, approximately 40 minutes. As the onions reduce, reduce heat as needed to prevent burning.
- Stir in mushrooms and garlic, cook for 5-8 minutes. Deglaze with white wine.

Charity of the Month – Bayville Village Church Food Pantry
The Mimi Mernin Food Pantry (aka the Bayville Village Church food pantry) was started as a small outreach service almost 20 years ago and operated out of a small shed at the rear of the church. Until recently, they solely relied on private donations. With the onset of the coronavirus, the Food Pantry expanded their services and moved to a conference room in the Village Church. They are currently open Saturdays, from 9am -12pm for drive up/no contact distribution. Presently, they are serving about 50 families/200 individuals per distribution date, offering dry goods, produce, meats, dairy items and more.
2020 Donations
We can all agree 2020 threw us a few curveballs – which is why it’s even more AMAZING that our customers have truly stepped up to help those in need. Through our Charity of the Month program, we were able to raise over $10,000 for a number of different local organizations. Community engagement has always been a huge part of this store – it’s important that we recognize the tremendous individuals that make these nonprofits tick, and really see how their work is impacting the neediest in our community. Thank you to those individuals and again thank you to our AWESOME customers. Let’s make 2021 even greater! ⠀

American Heart Month

February is American Heart Month, bringing attention to how we can motivate ourselves and each other to adopt healthy lifestyles that may help prevent heart disease. This year, heart health is extremely important, as people with poor cardiovascular health may also be at increased risk of illness from COVID-19.
Heart disease is the number one cause of deaths for most groups, affecting all ages, genders, and ethnicities. Luckily, there are some simple behavior changes that may prevent heart disease, including not smoking, maintaining a healthy weight, controlling blood sugar and cholesterol, managing high blood pressure, increasing physical activity and getting regular checkups.
