The only bad thing about peaches is that their season is relatively short. Low in calories, this stone fruit has antioxidants, fiber, and may even help reduce allergy symptoms. We should also mention that this sweet, oh-so-juicy fruit feels like a dessert unto itself. Yet, add some butter, sugar, and a homemade crust, and you might as well raise the white flag and surrender to one of the best desserts of your life. We’re talking, of course, about the Peach Tart.
There are lots of recipes out there, but Ashley comes back to this one time and time again. She swears it’s foolproof (you heard that right), so if you’re a little bashful about making your own tart from start to finish, this might be a good one to try out.
Ingredients
For the crust:
- 2 sticks salted(!) butter, cold, cut into slices
- 2 tbsp sugar
- 2 cups flour
For the filling:
- Enough peaches to layer an 8” tart pan from bottom to top, peeled and sliced
- 2 tsp sugar
- Apricot jam

- Food processor or pastry cutter
- 8” tart pan with removable bottom

Preheat the oven to 375 degrees.
To make the crust, put all of the ingredients in your food processor (or cut the butter with a pastry cutter). Mix the dough until the butter is in pea-sized pieces. With your hands, work the dough into a ball, then press and spread it evenly onto the tart pan.
To make the filling, cut the peeled peaches into about ½-inch slices. Pour them into a bowl and mix in the sugar. Neatly layer the slices into the pan until you’ve reached the top (be generous).
Bake for approximately 30-40 minutes or until the crust is browned and the sugar on the peaches begins to caramelize.
Once it’s out of the oven, let it cool fully. While the tart is cooling, heat the apricot jam on the stove, stirring and watching it very closely to avoid burning. When it reaches a texture similar to syrup, turn the stove off and brush the jam over the peaches.
Serve with whipped cream or vanilla ice cream. Ashley’s go-to is Van Leeuwen’s Vanilla Bean Ice Cream. Each bite will leave you speechless.
