This month, we’ve got our eye on that picnic-menu favorite: watermelon. Did you know that watermelon is about 90% water? What a sweet way to stay hydrated. It also contains the antioxidant, lycopene, which can help protect your cells from damage. Aside from cutting it into wedges and eating it as is, pair it with a salty cheese like halloumi to create a sweet and savory side dish. Simply grill up thick slices of halloumi (sprinkle some oregano on top) and squeeze a little lemon over it. Cut the watermelon into bite-sized pieces and serve immediately with the cheese. The salty, warm halloumi is the perfect match for the chilled, sweet watermelon.

This versatile vegetable can be grilled, boiled, eaten on the cob, or put into a salad or side dish. It’s at its sweetest right now, so don’t miss out. Watermelon is at its peak this month, and our kitchen is taking advantage of it with RT’s Greek Style Watermelon Salad. Sweet watermelon is tossed with tangy feta, briny olives, red onion, cucumber, mint, and basil. It’s all tossed with a citrusy dressing. This herby dish is balanced in flavor and so very fresh, making it a satisfying side salad or meal.

Kick back and chill out with our Blue Sunrise Smoothie. This bright and fruity drink is a nourishing blend of organic coconut water, organic lemon juice, organic banana, organic pineapple, and spirulina. Relax, refresh, rejuvenate.

Charity of the Month: The Glen Cove Education Foundation

The Glen Cove Education Foundation works tirelessly in support of its two missions. The first is to raise funds for the Glen Cove City School District, and the second is to engage the community so that they, too, will invest in the city’s schools. From funding programs for after-school clubs and outdoor classrooms, to donations for things like touchless water filtration systems and air purifiers, The Glen Cove Education Foundation is an enormous asset to the community, and we’re proud to give them our support this month.
