Hanukkah’s best-known food—the beloved potato latke (a.k.a. fried potato pancake)—is also a relatively recent addition to the festival-of-light festivities. Potatoes actually became part of the recipe in the mid-19th century, replacing pancakes made of cheese (usually from goats or sheep).
